Turning hindsight into foresight

If we step back for a moment, to grasp how far and how fast we have come, the relationship between scientific discovery, technological advancement and progress in wine production reveals common themes dominating the past, present and future of wine (Bomeman, Schmidt, Pretorius, 2013 Chambers Pretorius, 2010 Pretorius, 2000). 

First of all, we must acknowledge that we know very little about the first 40years of this time capsule . What we do know is that anatomically modem humans, clothed in leaves and furry animal skins, emerged from their caves to consttuct other kinds of shelter about 10 years ago. These hunter-gatherers established agriculture and the first great civilisation in Mesopotamia around the Tigris-Euphrates River system. 

Seven years ago, between what is now known as the Black and Caspian Seas, humans started to gather berries from wild vines in the forest. They used the seeds to cultivate vines in their villages to provide a convenient source of food. The accidental fermentation of a mixture of water and perishable grape berries in sunlight produced
