The Villages

The next stage may best be described as a primitive hot-filtration process. Two members of the village sit across the front of a simple fire resembling a Dutch oven, holding between them a bag about 30 feet long and about two inches in diameter. The lac inside the bag melts and, through one of the operators twisting the end of the bag, the lac is squeezed out. The study site is located approximately 56 km northeast of Kolkata India in the village of Gotra in Nadia District, West Bengal, (2546396N 662938E UTM, 88.59 N,... 

E). The village is approximately 1 km long and 500 m wide, oriented on a south-east to north-west trend. Milton Hershey returned to the village where he had been born, in the heart of dairy country, and opened his chocolate manufacturing plant. With access to all the fresh milk he needed, he began producing the finest milk chocolate. The meal would be a ready-to-use convenience product to which the consumer could simply add water and then proceed to the final steps of preparation. The time-consuming and labor-intensive steps of soaking, decorticating, and grinding would be eliminated.
