The specificity of microwave heating results from the thermal dependence of dielectric properties. The complex dielectric permittivity is very dependent on temperature and the dynamic behavior of microwave heating is governed by this thermal change. The electric field amplitude depends on the real and imaginary parts of the dielectric permittivity, which themselves depend on temperature as described by Eq. (60)  [Pg.45]
