The mono- and the diglycerides and their mixtures are called mono/diglycerides (MDG) and show surface activity due to their combination of hydrophilic and hydrophobic molecule parts. Depending on the nature of the fatty acid used, they are solids or liquids at r.t. Their m.p. generally increases from tri- to di- to monoglycerides Odor, taste and color depend also on the nature of the fatty acid and the degree of purity.
