Soybean samples, storage

Odorants that cause aroma changes, e.g. olf-flavours, may be detected by a comparative AEDA of fresh and deteriorated samples. Studies on storage defects of soybean oil [22, 51], buttermilk [52], boiled cod [53], dry parsley [54] and black and white pepper [55] are examples. [Pg.369]

Immobilized soybean peroxidase stability after ten washes and even after storage of the sample suspensions in a refrigerator (4°C) for 5 months The protein-coated microcrystals [20]... [Pg.212]

Japanese Society of Food Science and Technology Figure 13. Comparison of rates of insolubilization during frozen storage between soybean protein solutions frozen immediately after preparation (heated and unheated) and frozen after 2 days of storage (heated and unheated). The heated samples were held at 100°C for 5 min prior to freezing ( ll). [Pg.231]

Fig. 6.4. Effects of moisture content and storage time of cracked soybeans on total tocopherol contents of crude soybean oils (Source Chu and Lin, 1993). Cracked soybeans at moistures of 12% (diamonds), 15% (triangles), and 18% (squares) were equilibrated for one week before storage. Each data point is the mean of three samples with the standard deviation shown by error bars. Fig. 6.4. Aspergillus ochraceus has been isolated from a variety of Southeast Asian commodities, including maize, peanuts, soybeans and other beans, cashews and sorghum. Its presence or absence in any sample probably was related to length of storage rather than to geographical location or other factors (Pitt et al., 1993,1994, 1998). [Pg.398]
