Several authors used scales with elderly panels in sensory tests, to get both hedonic and intensity scores. However, these studies were usually carried out with healthy elderly people, who were able to come into the lab, rather than with frail and dependent elderly people (Kremer et al, 2007 Methven et al, 2012 Mojet et al, 2001 Withers et al, 2013). Furthermore, these authors were interested in the evaluations obtained thanks to the scales rather than in the way elderly people use scales.
