Giroud (1938) claimed that fruits rich in carotenoids are also rich in ascorbic acid— a relation which led to his suggestion that carotene may protect ascorbic acid from oxidation, this causing an accumulation of the vitamin in the cell. There is, however, no real evidence that his suggested correlation is in fact a reality. Recent surveys of the composition of fruits grown in South America (by Munsell and colleagues, 1949 1950) give no support to this contention. [Pg.94]
