Prolamins classification

Classification of the nonwheat proteins has not been so clear. The prolamin proteins of sorghum are kafirins, which have a high degree of... [Pg.151]

From the foregoing it would appear that as a group, the M proteins are related to the prolamins. The behavior of M protein picrate is also in accord with this classification. Like insulin, M protein forms a picrate which is soluble in 70% acetone (78). Although more than 30 immunologically distinct M types have been described (76), no chemical comparisons between the purified proteins of the various types have been reported as yet. [Pg.128]
