Rennet extract should contain no lipolytic activity. Rennet pastes used in the manufacture of hard Italian varieties (e.g., Romano, Provolone) contain a potent lipase, pregastric esterase (PGE), which is responsible for the extensive lipolysis and the characteristic piccante flavor in such varieties.
