Perfumes marjoram

Marjoram.—A speeics of thyme—origanum marjoram. This herb yields, by distillation, a strong scented essential oil, much used for perfuming soaps. It is called oil of orangeat by the French. [Pg.665]

Flavorings are usually better added the last hour of cooking. But, as the delicate perfume of marjoram or the pep of pepper are easily lost in cooking, add them very shortly before serving. [Pg.363]
