The hand-cranked freezer with a dasher (paddle) was invented by Nancy Johnson of the U.S. in 1846. This made it possible for everyone to make ice cream. The dasher beat air into it which gave it a better texture and then acted as an insulator, so the ice cream did not appear to be as cold as it was. [Pg.697]

Thyra Winslow says that the first ice cream of the Philadelphia type was made in London in about 1800 by a confectioner named Gunton. She says that Gunton s methods of freezing were very crude. Some years later the method of making ice cream was greatly facilitated by the invention of the ice cream freezer by Nancy Johnson, the wife of an American Nayal Officer. [Pg.384]
