Assays for hydrocyanic acid are almost invariably low compared with the amount added it should be the first constituent determined immediately on opening the sample in order to avoid low results due to volatilisation. Monier-Williams has also shown that hydrocyanic acid may form a cyanhydrin with laevulose which, in the presence of alkali, is hydrolysed to hydroxy-acids and ammonia. Hence, in mixtures containing invert sugar, hydrocyanic acid figures will be low. [Pg.326]
