How did the Victorians make ice cream

The people of London and Paris in Victorian times (the second half of the nineteenth century) were always keen to experience the latest fad or novelty, just like many rich and prosperous people today. And one of their favourite new inventions was ice cream and sorbets made of frozen fruit. [Pg.216]

Dissolving a solute in a solvent causes a depression of freezing point, in the same way as mixing solids. [Pg.216]

This depression of the freezing point occurs in just the same way as the lower melting point of an impure sample, as discussed previously. This determination of the depression of the freezing point is termed crysoscopy. [Pg.217]
