Sucrose hexadecanoate

The noncaloric, edible fat substitute olestra (Real Life 21-1) consists of a mixture of sucroses esterifled with seven or eight fatty acids obtained from vegetable oils, such as hexadecanoic (palmitic) acid. The fatty acids shield the sucrose core of olestra so effectively that it is completely immune to attack by digestive enzymes and passes through the digestive tract unchanged. [Pg.1099]
