Graham, Sylvester

Sylvester s (111 Pleasant St., a 413-586-5343), a cafe located in the historic Victorian home of Dr. Sylvester Graham, is a funky hangout popular for its country-style breakfasts. The menu is not entirely meatless, but you ll find several vegetarian salads and sandwiches on the menu. Smith students phone Pizzeria Paradiso (12 Crafts Ave., S 413-586-1468) for their pizza fix. Vegans can replace mozzarella with soy cheese. 

A whole wheat flour mix, named after Sylvester Graham, an advocate of dietary reform. 

Meanwhile, the American health foods movement got underway in the early 1800s when the former Presbyterian preacher, the Reverend Sylvester Graham, toured the country giving lectures on the merits of eating coarse, whole grain breads and abstaining from fats and meat. He is immortalized by the graham cracker, which was named after him.
