Glutamine, hydrolysis properties

Asparagine and glutamine, the amides of the acidic amino acids, are grouped here. The amide group bestows hydrophilic properties to these two amino acids. Acid or alkaline hydrolysis of proteins also splits amide groups, and ammonia and aspartic or glutamic acid are released. [Pg.28]
