Glucose oligomers

Pure D-fmctose is a white, hygroscopic, crystalline substance and should not be confused with the high fmctose com symps (HFCS) which may contain 42—90 wt % fmctose and 23—29% water (8,9). The nonfmctose part of these symps is glucose (dextrose) plus small amounts of glucose oligomers and polymers. Fmctose is highly soluble ia water at 20°C it is 79% soluble, compared with only 47% for glucose and 67% for sucrose. [Pg.44]

Peak number 1 corresponds to glucose (Af — 180) and peaks are seen every approximately 20 units (M = ca. 2 000). (Reproduced by permission of Polymer Lab.) Over the last decade there has been growing interest in the interaction of dmgs with one group of container compounds, the a-, and y-cyclodextrins (cyclic D-glucose oligomers) and their now myriad derivatives. The cyclodextrin molecules have cyclic stmcmres with internal diameters of 0.6-1 nm (see section 5.6). The interior cavity of the cyclodextrin... [Pg.412]

Coarse grain MSB model (black) and atomistic model (gray) of the simplest a(l — 4) glucose oligomer, the dimer ct-maltose. The coarse grain particles Bl, B4 and B6 representing each monomer are mapped from the positions of the carbons Cl, C4, and C6 of the atomistic model, respectively. [Pg.41]

Cyclodextrins are cyclic glucose oligomers consisting of six or more monomer units. The cyclodextrin structure is such that the hydrogens of C-H bonds are directed towards the inside of the cavity of the molecule and hydroxyl groups are directed towards the outside (Fig. 11-7). Therefore, the molecule has a hydrophobic cavity, which owing to its hydrophobicity can bind nonpolar molecules into host-guest complexes and transfer them into the polar phase. This property of cyclodextrins allows us to use them as components of catalytic systems in two-phase catalysis by metal complexes. [20-23, 182-196] this essentially increased the activity of these catalytic systems. [Pg.484]
