Ergosterol: Ergosta-5,7,22-trien

Ergosterol (ergosta-5,7,22-trien-3P-ol), which occurs in yeast, moulds and algae, is provitamin D2. It can serve as an indicator for fungal contamination. A tolerance limit of 15mg/kg solid has been proposed for tomato products. [Pg.229]
