A method has been developed by Mares and Stone (1973a) for the isolation of wheat endosperm cell walls using 70% aqueous ethanol as the isolation medium. Aqueous ethanol is used instead of an aqueous medium to minimize loss of water-soluble polymeric components present in the native walls. One of these spontaneous mutants gave rise to the precious sticky rice of Thailand. The sticky rice lacks the starch amylose, which constitutes up to 30% of the total starch in nonsticky rice endosperm. The lack of amylose is due to a mutation in a gene called Waxy, which encodes an enzyme required for amylose synthesis (Sano 1984). Sticky rice is an important culinary and cultural component throughout East Asia and is used in festival foods and desserts. In upland regions of Southeast Asia, it is a staple food in many homes. Ten percent of the rice traded each year is sticky rice.

Of the fatty acid in the fixed oil, most of which is contained in the polygonal cells in the seed endosperm, total monounsaturated acids account for 10% and total polyunsaturated fatty acids 2%. The main components of an expressed oil are petroselinic acid (up to 75%), oleic acid (up to 25%), linoleic acid (up to 15%) and palmitic acid (up to 5%) (Weiss, 2002).
