Pectins in aqueous solutions show pseudoplastic non-thixotropic behaviour, independent of their degree of methoxylation. Figure 1 shows the viscosity curve of a 2,5 % pectin solution, sheared the preselected shear rate-time function. The viscosity curves for the increasing and decreasing shear rate are superimposed. The pseudoplasticity of pectin solutions decreases with decreasing concentration. [Pg.410]

HPC (Klucel E5, Hercules hydroxypropyl molar substitution, MS-3) and HPMC (Methocel E15, Colorcon hydroxypropyl molar subsitution, MS-0.23s degree of methoxyl substitution DS-1.88) were studied as a thin film of approximate thickness of 5-10 urn cast from an aqueous solution onto a clean aluminium substrate and allowing the solvent to evaporate. Scanning electron microscopy of films prepared in this manner revealed a continuous surface free from cracks and aberrations. [Pg.102]

For bUayer formation in emulsions in a first set of experiment, commercially available pectin samples were used [51 ]. To get a deeper understanding of the impact of molecular structure of the pectin on the functionality of the bilayer-stabilised emulsions, pectin samples with well-defined degree of methoxylation and distribution of these groups were produced on the lab scale.
