Deck ovens

While there are small bakers who are using old ovens that consist merely of a heated box most modern ovens fall into one of three classes They are either deck ovens, rack ovens or travelling ovens. Travelling ovens are also known as tunnel ovens. [Pg.163]

Deck ovens resemble a cupboard with several chambers (Figures 6 and 7). The floor of each compartment is heated so heat transfer is mainly by conduction. These ovens are used among others by hot bread shops and those bakeries selling pies, pizzas, sausage rolls and similar items. [Pg.163]

These products are the sort of bread that can be made without an oven. If a flat sheet of dough is placed on a hot griddle or bake stone then the dough will cook by conduction. The floor or wall of a heated oven or a modern deck oven are other possibilities. [Pg.192]

One can see that T G (tongue and groove) profile shown in Figure 6.2 had much lower density than a maximum one. Overall porosity was accounted for 13% of the material volume. Hand Lay-uplSpray up Spray up and open contact molding (hand lay-up) in one-sided molds is one of the cheapest and most common process for making fiber composite products. Typical products are boat hulls and decks, truck cabs and fenders. In a typical open mold application, the mold is first waxed and sprayed with gel coat and cured in a heated oven at about 49°C. In the spray up process, after the gel coat is cured, catalyzed resin (usually polyester or vinyl ester at 500-1,000 cP viscosity) is sprayed into the mold, along with chopped fiber. A secondary spray up layer imbeds the core between the laminates (sandwich construction). Then it is cured, cooled, and removed from the reusable mold. In hand layup processing, continuous fiber strand mat and other fabrics such as woven roving are manually placed in the mold. Each ply is sprayed with catalyzed resin (1,000-1,500 cP) and the resin is worked into the fiber with brush rollers to wet-out and compact the laminate. [Pg.618]

In the thermal spraying industry, a processing benefit of applying zinc first and then aluminum is that the quality of blasting pretreatment required for zinc spraying is less critical than for aluminum, especially when gas pistols are used. Such duplex coatings have been used on Royal Navy ships decks, for example, and also in hot areas, such as near coke ovens, where aluminum helps to reflect heat. [Pg.56]
