It is difficult to predict what the future for the development of the active agents will be. By considering what was declared by very well informed authors [1], there are potential applications for the active agents to achieve long-term food protection. Certainly, it is true that protecting food for a few days is one thing, but there is a quite another objective, more attractive, to be able to keep the same food under safety conditions over a period of time exceeding one or two weeks. [Pg.218]
