Carbohydrates, glass transition behavior

Further research is necessary to put the glass transition behavior of carbohydrates in general, and their mixtures, on a predictive basis. Additionally studies on the relaxation behavior and mechanical properties and factors affecting the sorption of water will give useful information relevant to the technological use of these materials.
