Calcium malate

Ca.ndy. Its low melting point and sugar inversion properties make malic acid a desirable acidulant, especially in hard candy products (44,45). Due to their insolubiUty, hard water salts can cause clouding of the finished product. However, because of the higher solubiUty of calcium malate [17482-42-7] relative to alternative acidulants, clarity of the finished product is enhanced. Additionally, in sugar confectionery products where acidulation may exceed 2.0%, malic acid can provide economic benefits. [Pg.524]

L-Malic acid (HOOC CH2 CHOH COOH) for use in the pharmaceutical industry is manufactured by conversion of fumaric acid by the intracellular enzyme fumarase produced by various microorganisms. The excess fumaric acid is easily separated by crystallization after concentration of the mother solution. Further addition of lime allows malic acid to be separated as calcium malate within a bioreactor crystallizer system. By adding diluted sulfuric or oxalic acid, the salt is split into free malic acid and calcium sulfate or oxalate, the latter being removed by filtration (Mourgues et al., 1997). [Pg.337]

When there is too much surplus malic acid in the initial must, part of the calcium carbonate added to the treated volume produces soluble calcium malate. At the time of final blending, the surplus calcium reacts with the tartaric acid of the untreated must. The deacidification thus occurs in two steps and acts essentially on the tartaric acid. The tartaric acid concentration therefore has to be adjusted in order to decrease malic acid concentrations substantially, by double salt formation (Usseglio-Tomasset and Bosia, 1992). This result can be obtained by using a mixture of calcium carbonate and calcium tartrate, also... [Pg.309]
