This chapter summarizes research carried out at University of California, Santa Cruz to develop a non-enzymatic, optical approach to continuous saccharide sensing. It is based on the coupling of a fluorophore with analyte binding quencher. This review follows the progress of our research in the saccharide sensing field over the past 17 years.
