Dr. Fatih Yildiz received his BS from Atatiirk University in Erzurum, Turkey. He received his MS and PhD in food biochemistry from the University of Maryland, College Park. He received his assistant and associate professorships from the Middle East Technical University, Ankara, Turkey. He worked as a faculty member at the University of Maryland for five years. Dr. Yildiz worked as a professor in the Department of Food Science and Nutrition at the University of Minnesota, Minneapolis. He has also conducted research at the Institut National Recherches Agronomiques (INRA), Avignon, France as a visiting professor in 1997. [Pg.526]

Currently, he teaches and conducts research in the biochemistry, biotechnology, and food engineering departments at the Middle East Technical University, Ankara, Turkey. He has worked on research projects with the Food and Agriculture Organization of the United Nations (FAO), United Nations Industrial Development Organization (UNIDO), the United Nations Children s Fund (UNICEF), and the North Atlantic Treaty Organization (NATO) as a project director.
