Carbohydrates have a low solubility in organic solvents and there are few reports on the behavior of glycosidases in almost 100% organic solvent. Bourquelot and Bridel described the synthesis of various alkyl p-glucosides from glucose and alcohols with the enzyme suspended in high concentrations of the respective alcohol (60-95%, v/v) (30). The yield of ethyl p-glucoside was reported to be about 90% in 95% (v/v) ethanol.
