Ultrahigh temperature pasteurization

Various pasteurization heat treatments ate identified by names such as quick time, vacuum treatment (vacreator), modified tubular (Roswell), small-diameter tube (MaHotizer), and steam injection. The last three methods are ultrahigh temperature (UHT) processes (see Fig. 3).
