Tannin activity temperature effect

Pumping-over with aeration is only beneficial at certain moments, but the pumping-over operation in general has other effects. It homogenizes the temperature, sugar concentrations and yeast population of the fermentor, compensating the effects of the more active fermentation in and just below the pomace cap (Section 12.3.1).
