Preparation of Herbs for Market

The main forms in which herbs are handled in commerce are as follows  

Chopped, cut, or sUced-leaves, very coarsely broken into pieces about 3-6 mm across. This is a convenient form for bulk transportation prior to further processing. 

Broken or rubbed-leaves and other soft herbaceous parts are coarsely screened to remove all hard steins. This is the form in which most domestic herbs are marketed. 

Ground-milled herbs powdered to a specified sieve size. 

Blended seasonings-broken or ground herbs blended together ready for use in foods. Composition can be varied to suit particular dishes.
