Chitin and chitosan have various characteristics that are not found in other natural polymers and biopolymers. However, for a long time, chitin and chitosan were unused bioresources. In the investigation of the importance of natural polymers, chitin and chitosan, as well as cellulose, are being considered functional polysaccharides, and are actively being studied and applied in various fields, such as medical treatment, medicine, food, chanical industries, fibers, and others (Uragami et al. 2001 Uragami and Tokura 2006).
