The understanding of the physical gelation process of a biopolymer/ solvent system is a quite difficult problem, because the gel formation is a non-equilibrium phenomenon. This behaviour leads to an hysteresis effect in the thermal treatment of the sample by cooling and heating below the sol-gel transition temperature. The measured physical values are different for cooling and heating the samples, not only in the mechanical but also in the optical quantities. [Pg.325]
