NOTE WELL The fluorine content of foods varies widely and is affected by the fluorine content of the environment (the air, soil and/or water) in the areas in which they were produced. Nevertheless, some foods do cumulate and contain more fluorine than others. Remember that it s the total fluorine ingested over an extended period of time that s important. There is hazard of fluorisis (evidenced by mottling of the teeth) (1) when the fluorine content of drinking water exceeds 2.5 ppm (2) when the amount of fluorine ingested exceeds 30 to 40 ppm of dry matter of the diet or (3) when a person consumes (in food and water) fluorine in excess of 20 mg/day over an extended period of time.
