Full-fat soy exits the expander as a meal that flashes some of the moisture that had been injected as steam. After flashing, the meal still contains 15%-20% moisture. Moisture is then reduced in an apron type dryer/cooler. The air in the dryer is sometimes not preheated. The hot soy meal contains sufficient heat to drive off the moisture, provided it contacts enough low humidity air to carry the moisture away. [Pg.2959]
