Lepista irina

Zorn H, Langhoff S, Scheibner M, Nimtz M and Berger RG. 2003. A peroxidase from Lepista irina cleaves P, 3-carotene to flavor compounds. Biol Chem 384(7) 1049-1056. [Pg.222]

In 2003, Zorn et al. [80] discovered a fungal peroxidase from Lepista irina—a valued edible fungus—that cleaved -carotene to flavour-active compounds. According to the authors, the cleavage of -carotene to aroma compounds by a fungal peroxidase had not been reported before. [Pg.498]
