In addition to differences in scattering, NIR lighting/imaging can also be used to take advantage of more subtle chemical differences between objects. In this case, more sophisticated systems based on multispectral or HSI are required. 

In the following sections, we will describe several examples of NIR imaging use in the food industry. Examples are categorized according to the industrial issues they address.
