In another study by Tsen et al (14), a substantial PER difference was observed between diets with bread crust (0.36) and bread crumb (1.35). Palamidis and Markakis (12) also found that the PERs of their bread and its crumb were 0.46 and 0.91, respectively, while the crust showed a negative PER, -0.23. Hansen, et al.(18) reported that bread crumb and crust had respective PERs of"T.36 and 0.62. The difference in PERs for bread crumb or crust reported by the three groups of investigators is largely due to different raw materials and processing conditions for the breads. Nevertheless, the marked difference in PER between bread crumb and crust indicates clearly that the browning reaction can reduce the nutritive value of bread (Table IV). [Pg.384]

The lipid, water, and protein contents of certain tissues vary markedly as a function of age. For example, the adipose tissues of neonates contain about 55% water and 35% lipids, whereas the corresponding figures for the adult are about 25% and 70%, respectively (Friis-Hansen, 1971). The proportion of water in skin falls as a function of age, due to an increase in collagen. The water contents of liver, brain, and kidneys decrease from birth to adulthood by 5-15%. The decrease in water contents of liver and kidneys is primarily due to an increase in protein, whereas this change in the brain is due to an increase in myelin. The overall composition of muscle in terms of lipid and water does not seem to vary with age (Dickerson Widdowson, 1960). [Pg.29]

Fullerenes and their derivatives not only represent the most massive and most complex single particles in interference experiments until recently, they also mark a qualitative step towards the mesoscopic world.
