Good Herdsmen

This organisation, run by Josef Finke in Ireland, has developed into a large-scale organic business, in a similar manner to that of Karl Barton at Chisel Farm in Dorset. 

Good Herdsmen, which co-ordinates the selling of beef and lamb from 45 organic farms in Ireland, now sells to 60 Tesco supermarkets on a weekly basis. There is a continuous lamb supply from May to 

February, and beef is sold de-boned and vacuum packed and cut to the customer s specifications, all certified and labelled with the Organic Trust symbol. 

from Ballybrado House in Tipperary, has also begun to delegate to other companies, with a bakery in Bray, County Wicklow, and knitwear produced by Kerry Woollen Mills.

Efforts are currently being made to expand the uses of wool for such products as baby goods, felt cushions, shoes, tents and for building insulation. There is undoubtedly a demand in Europe for wool free of organo-phosphates. See Chapter 10, under the heading Good Herdsmen.
