The German Society for Fat Science (DGF) created in 2006 the DGF Canola Oil Award for virgin canola oils of excellent flavour with the aim to strengthen the consumer s trust in the quality of virgin canola oil, to improve the transparency on the market, and last but not least, to improve the awareness of the producers for the quality of their product (Matthaus et al., 2008). Especially this final point is of major importance, because without knowledge of what constitutes high-quality virgin canola oil, it is not possible for the producer to supply the consumer with such a product. [Pg.182]
