Gelatin parent molecule, collagen

A more detailed discussion of the components of parent gelatin will be deferred to the following section. The point to be made here is simply this that while the generally accepted, three-strand interpretation of the collagen molecule is probably correct, the details of how the molecule is as- sembled from its subunits remain obscure.
