Grape peel and seeds are especially rich in the flavan-3-ols, catechin, epicatechin, gallocatechin, epigallocatechin, epicatechin gallate and catechin gallate (Fig. 3). The content in the peel varies greatly (10-520 mg/kg), since it depends on the cultivar and seasonal and environmental factors [16]. In addition, the occurrence of the flavanonols astilbin (dihydroquercetin 3-rhamnoside) and engeletin (dihydrokaempferol 3-rhamnoside) has been described. [Pg.749]

Flavanols (Flavan-3-ols), found in the seed and skin, are the most abundant class of flavonoids in grapes. These are often specifically called the flavan-3-ols to identify the location of the hydroxy group on the C ring. The five common flavan-3-ol monomers found in grape skins are (+)-catechin (C), (-)-gallocatechin (GC), (-)-epicatechin (EC), (-)-epigallocatechin (EGC), and (-)-epicatechin 3-gallate (ECG). [Pg.486]
