Flip-overs

Next, the dough is scaled, moulded into shape, and the pieces are placed on a board that has been dusted with maize polenta or rice cones. The pieces are then proved for 0.5 hour. Next, the muffins are baked on a hot plate and flipped over to cook the other side.

The case of polyatomics, which is considered in more detail below, follows analogously. The point to keep in mind is that the symmetry restricts the number of distinguishable states. The symmetry number is the number of equivalent (indistinguishable) positions into which a molecule can be carried by rigid body rotation. For example s = 12 for CH4 since the molecule can be held by a CH bond and rotated into three equivalent positions, and there are four CH bonds. Similarly for benzene s = 12 since there are six indistinguishable positions for rotation about an axis perpendicular to the plane of the molecule (and through its center), and six more when the molecule is flipped over. 

The geometry of the cis-alkylcyclohexanol is favorable for trans elimination since the hydroxyl and the neighboring trans hydrogen are coplanar, but this is not true for the l,i-trans isomer hence the molecular conformation has to flip over, to set the hydroxyl group in the axial position for the trans elimination to occur. This would require a few kilocalories of energy and for frans-lert-butylcyclohexanol it would be more difficult to achieve than for IroMs-methylcyclohexanol. It is, therefore, possible that the trans elimination from a boat conformation, or possibly even an epimerization from the trans to the cis isomer which then undergoes a trans elimination reaction. Such an epimerization was found to occur under conditions of dehydration of certain alcohols over alumina, as will be seen under 1,4-cyclohexanediol. The more facile elimination of the cis-i-tert-butylcyclohexanol system as compared with the trans system in solution was also reported in the literature 63).

Topologically, one cannot go from B-IMA to Z-IMA by simply turning the helix around the other way. In addition to the rotation of the helix in the opposite direction, the base pairs must "flip over, as they have an orientation relative to the backbone opposite to that which is found in B-IMA. Thus, the transition from B-IMA to Z-IMA is a rather complex procesa involving maiqr structural rearrangements.

As a result, the spins originally precessing with B0 flip over, and now precess against B(). Absorption of energy AE from B, takes place (nuclear magnetic resonance).
