Flat sour bacteria

Bacteria that are heat lovers. These bacteria grow at temperatures of 131 F (55 C) to as high as 167 F (75 C). They are somewhat of a curiosity, since many of the proteins of other organisms would coagulate at these high temperatures. Ther-mophiles are commonly found in hot springs and compost heaps, and do not pose any real health problems. However, thermophiles are responsible for the flat sour which occurs in some home-canned food. [Pg.1015]
