Experiment 37 Solid-Liquid Extraction Determination of Nitrite in Hot Dogs 

Nitrite is determined by diazo-coupling with sulfanilamide and NEDA (see below for full name), forming a reddish color that can be determined with a visible spectrophotometer.

The idea for this experiment came from Mike Carlson at the Veterinary Diagnostic Center at the University of Nebraska, Lincoln. 

Sulfanilamide solution. Dissolve 10 g of sulfanilamide in 350 mL of water to which has been added 25 mL of concentrated phosphoric acid. Dilute to 500 mL with water. Store in refrigerator. Solution is stable for at least 1 month.
