The enzymatic synthesis of cyclic dextrins occurs during the action of macerans amylase on starch by a cyclizing mechanism while the synthesis of linear oligosaccharides occurs during the action of the enzyme on the dextrins and appropriate co-substrates by coupling and homologizing reactions. [Pg.51]
