Some properties of the P-D-fructofuranosidase from Candida utilis have been reported. Purification of the P-D-fructofuranosidase from Corticium rolfsii to homogeneity required extensive ion-exchange chromatography. The purified enzyme (mol. wt. 2.2 x 10 ) is inactive towards phenyl a-D-glucopyranoside and maltose, but released D-fructose from sucrose, raffinose, and inulin. The enzyme is stable between the pH values of 1.5 and 8.0 at 2 C, is optimally active at pH 4 and 73 °C, and is stable at temperatures <65°C. Possible uses of the enzyme in confectionery were discussed. [Pg.378]

The properties of a glucoamylase activity isolated from cultures of Corticium rolfsii growing in the presence of sucrose have been investigated. The enzyme is stable to acid. [Pg.410]
