Although the procedure appears to be a panacea for the problems of keeping produce fresh, thus eliminating the need for preservation methods requiring additives, there are drawbacks that are still being researched. For instance, the packages must be sealed to allow gas atmosphere control, and temperature fluctuations must be kept small or condensation will occur. Wetting of the produce, especially where there is any injury, can lead to development of rot (Lazan and Ali, 1991). Studies in which diseases have been reported with MAP produce have been summarised (Prince, 1989). [Pg.103]
