Citrus fruit, flavanone conjugates

Flavanones These compounds are characterized for being highly reactive they can undergo hydroxylation, glycoxylation, and O-methylation reactions. In the diet the input of flavanones comes from citrus fruit, mainly as hesperetin conjugates, which are also responsible for the bitter flavor [12].
