Bordeaux style

Wine. There are excellent organic wines produced in New Zealand, with many exported. One winery with many awards to its credit is Richmond Plains, owned by the Holmes Brothers in Nelson province in the South Island. The winegrowers of the region show remarkable co-operation by sharing processing facilities. Their first vintage was in 1995 and they now export to Australia, Japan and the UK. The Richmond Plains collection includes three whites - Sauvignon Blanc, Autumn Harvest and a barrique-fermented Chardonnay, and two reds - Pinot Noir and a Bordeaux style blend named Escapade . 

Due to its simplicity and its favorable effects, pumping-over is an essential operation in red winemaking. Inspired by the recommendations of Peynaud (1981), the following steps are applicable to Bordeaux-style winemaking ... 

Selection 107 (Marechal Foch x Schuyler). Selection 107 is a blue wine grape selection of vinifera (sic) quality. The clusters are medium sized (78 g), shouldered and tight. The berries are medium small, sweet and seedy. Plant hardiness is 9/10, and vigour is medium strong. It is moderately productive, with a harvest date of 26 September (midseason). The Brix is 24.0, and TA is low. It was said to have potential for a Bordeaux-style wine.
