If the objective is to detect the presence of animal fats in vegetable oils or fats, it is necessary to use other analytical tests in addition to the identification of the sterols, for example, a determination of the composition of the fatty acids by GLC (method 6.2.16) in practice, branched-chain acids and fatty acids with an odd number of carbon atoms are only present in significant amounts in animal fats and oils.
